Local restaurant entrepreneur Miguel Perez is transforming former Players Sports Grill to become the new Guadalajara Grill.  Set to open in January 2018 across from the convention center, the restaurant will deliver fine dining with a menu including prime rib, seafood, and steak with an authentic Mexican flair.

“Running the kitchen comes as natural to Miguel as breathing or playing soccer”, said Jon Walter with NAI Excel who facilitated the purchase.  “Miguel is always passing on his trade secrets to chefs and staff conveying his personal touch in every dish”.  Raised in Guadalajara Mexico, Miguel learned the restaurant business from his mother who owned and operated taco stands for some 30 years.  Miguel moved from Mexico at a young age and has been a resident of Southern Utah since the early 80’s.  In 1983 Miguel started coaching with the Dixie Flyers and in 1988 Miguel opened his first local restaurant Pancho and Lefty’s.  It has been a huge success and is well known by local residents as well as travelers.

Miguel’s restaurant just south of the University on 700 south is named after his mother Señora Dona Maria, affectionally called Casa Dona Maria.  While Pancho and Lefty’s and Casa Dona Maria’s are full service sit down restaurants, Miguel’s El Coyote Charro Restaurants are more his mother’s taco stand style allowing customers to order and pick up a quick lunch on the go.  Today Miguel operates five restaurants in Southern Utah and Mesquite, soon to be six.  Since purchasing the property this fall, Miguel is preparing for renovations and getting ready the most important component of the restaurant, the kitchen.  With Guadalajara Grill, Miguel is spanning the spectrum of authentic Mexican dining from quick serve to the finest experience St George has to offer.
